This Sushi haven has been in Palm Springs since 1980, and although it has changed locations throughout the years, it has stayed consistent in providing outstanding Sushi. Owned by trained Culinary Chef Kiyoshi Ishikawa and his lovely wife Teruka, Kiyosaku is a Palm Springs institution. The restaurant itself is small with an intimate Sushi Bar and a handful of tables to dine at. But for me, the quaint quarters only add to the optimum Sushi experience which is offered by the masterful hands of Ishikawa. One of his signature creations is the Kiyo Grapefruit. It is a concoction of fresh scallops, Alaskan crabmeat, salmon, tuna and Ishikawas special sauce, all assembled into a hallowed out grapefruit with the fruits juice and flesh as accompaniments. It is like dunking a grapefruit into the ocean and retrieving the wonderful flavors in every bite. But the Kiyo Grapefruit is just one of the delicacies at Kiyosaku, and of course there are premium Sakes and Beers to elevate your dinning encounter. One of The Palm Springs Locals favorites, a night at Kiyosaku will certainly quell your Sushi cravings. Arigato!
